I bought the Plex Lifetime Pass years ago when I had a desktop and was using that with an old drive that I no longer have. As the years have gone on, I have shifted to just streaming stuff on Apple TV through all the various streamers and Plex fell by the wayside. I'd like to revive it and start re-building out my collection. But I no longer have a desktop computer or a large external hard drive to use, so I'm trying to figure out the best way to start my re-build.

So what is a very barebones NAS build that I can use to get restarted? No 4k TV, no petabyte media library, just a dude looking to start building a library and use his Plex subscription again, and trying to find the cheapest NAS solution to do that.
