What's your go-to, "signature" dish to impress a guest?

  • Eggs - Seafood omelette (crab and bay shrimp) or ETO (egg to order) or Frittata or Quiche
  • Fish - grilled salmon with fennel root or Tuaca Scallops
  • Lamb - Shashlik or Braised Shanks w/gremolata
  • Chicken - chicken mozzarella or picatta or marsala, or half chicken roasted with demi-glace, or "fry then bake" fried chicken
  • Beef - Grilled Tri tip or Rib eye with Bernaise when a steak is requested.
  • Cured - Corned beef, canadian/back bacon.
  • Pork - stuffed/grilled tenderloin
  • Smoked - Beets, Pears and Apples
  • Vegetable - green beans sauteed with walnuts and bleu cheese, or sauteed in a wok with slivered almonds and soy sauce and sesame oil
  • Shellfish - Cioppino or wine/butter steamed clams
  • Bread - sourdough
  • Cultural - Russian Pedeshki or Lapsha or Borscht
  • Diner style - Grilled Cheese or Cobb Salad
  • Asian - Char Siu or Wonton Soup/Fried or soba noodle salad
  • Dessert - lemon pudding cakes
  • Vegetarian - pizza (variety - I make vegetarian sourdough for the crust) and chili and wraps and lasagna
  • Fried - prawns or monte cristo sandwiches, zucchini, mozzarella ( I started as a fry cook )
