Would you be willing to date a bisexual woman?

I respect that, and of course we can still be friends! I'm bi, and I'm not suggesting our experiences are the same. Regardless, I know personally it's an absolutely horrible heartbreak when a woman you love dates a man. Moreso than them moving on to another woman. I personally don't think it's productive to ignore that in the sake of bi activism, because while bi people should be able to date who they want without criticism, we should all be able to talk about the specific pain it causes when someone leaves you for a man. That being said, there are so many great bi people out there, and they are all different people! There are bi people who have dated men before who are extremely loyal and won't look back. There are also bi people who choose to date only women intentionally, because they enjoy those relationships more. Of course you are entitled to your own preferences though, I'm just saying it may be worth considering :-)
