Has anyone done Disney with food allergies?

I should clarify, I have been to Disney since I was diagnosed, but I just ate in the food court one year and the next I flew blind and ate at a few table service restaurants. It was pretty frustrating and disappointing. I know they come out and talk to you, but I found that process to not work well at all, at least at the ones I went to.

Some have the gf menus, which helps, but I don't know what they have ahead of time. I may hate all the selections. The ones that didn't have gf menus, the chef would come out and say "What do you want to eat?" and I'm like "Um...I have no idea". I have no idea what they can make, what ingredients they have, what this guy is skilled at making, and I don't have a recipe bank in my brain that I can pull from! I had no idea how to answer that question.

Easily the most frustrating experience was at rainforest cafe. He asked me what I wanted, I didn't know what to tell him, so I asked what he had made in the past for gluten free guests. He wouldn't give me any suggestions. So I ask the question a couple of different ways, like what he would make for himself if he couldn't eat wheat, etc. Nothing. So I start going down the menu and asking if various dishes can be made gluten free, if this sauce is safe, if this ingredient is safe. Everything gets a no. So at this point, I'm frustrated and he's plainly frustrated with me. Finally I just ordered a plain piece of meat and plain broccoli. I could've had a better meal at the hotel (for a quarter of the price).

Some people have said they had really good experiences, so I'm hoping it'll be different this year, but I don't want to go to restaurants blind. I don't want to bank on showing up and they have something worth the high prices of Disney. If I get there and the chef tells me I'm stuck eating the same frozen chicken fingers they sell at the resort, i'm going to feel like I just spent a ton of time and extra money traveling to a restaurant that wasn't worth it, if that makes sense.

I'm hoping people can tell me about their experiences so I can plan around that :-)
