Cost less has less ram (Unless your doing some seriously intensive stuff you don't need 64GBs of Ram. Even 32GBs might be more than you need). Went with the 5820K over the Xeon. The 5820k can be over clocked for more CPU power if you need it. Motherboard is MATX to make the PC much more Compact and you can Water cool with it easily with the chosen case. 2x 850 Evos for some raid Zero SSD action and can be backed up with a Partition of the 4TB WD Black HDD. Went with the 1000w EVGA PSU as it's very high quality and leaves headroom after u Over clock the GPUs. For the GPUs I went with 2 980tis as they are beast cards and will Max games and work well with the monitor I put in. The Monitor is the Glorious ACER 1440p IPS 144hz Gsync Monitor. The 980tis will power it well. Also Included Windows 8.1 64bit as it's cheaper than 7 and acts relatively the same with start is back. All this while coming in less than your build.

I will warn u now not to use Seagate HDDs. The Failure rate is much higher than Western Digital and HGST (HGST is probably the most reliable with WD coming in close). I once made the mistake and ended up replacing all of them within the first 2 weeks of my first build.
