You may have developed an allergy alongside celiac, it's quite common. I know you said you're really careful but you also note that you eat out at non GF places. Just because you don't get symptoms all the time doesn't mean you aren't getting glutened, please take eating out seriously.

Symptoms can vary, it's rather arbitrary which is immensely frustrating. And like I say, it's really quite common to develop issues after transitioning to a GF diet as your intestines are recovering. Plenty of celiacs can't have lactose, eggs, certain chemicals, etc. It may be gluten that you're consuming through an at-home item, it may be that you're still sensitive and are reacting to certain foods at home, or it may be that you have developed an allergy or intolerance to something else. Alternatively, you have another issue that isn't related to celiac at all. Definitely see your doc and start the process of elimination!

Have you had bloods taken? Any diagnosis? There's no ifs or buts about gluten if you have been.
