Employers hesitant to hire me for full-time work because I don't have previous full-time, permanent work experience. Help?

Like you said, you don't have much to go by. I wouldn't necessarily judge an entire company by their HR, but it's hard not to when they're acting as the face of the company in this case. One of the interviews I had last week went fine. I was confident and answered everything just fine (even though I was metaphorically ready to crap myself on the way to it). But the interview was terrible. I could tell by the way he was standing in his LinkedIn photo that he was full of himself. When I got feedback from HR (on behalf of the interviewer, who would be my boss), I was told that the interview was "too perfect" and that the interviewer did not see that I was "fun to work with".

First of all, the interviewer did not maintain eye contact. He also frequently said "uhh", "umm", and "I was gonna ask you something, but I forgot". He was extremely monotone too. After hearing everything he could about me and telling me that I'm perfect for the job, especially compared to previous applicants, he asked me what he should know about me that is not on my resume. So I mentioned that I play the piano, I play video games, etc (I researched him beforehand, so I know things about him). He even told me he used to play them more, but now he has kids. So this whole "he's too perfect, he's not fun" bs really put me off from the job/company because it tells me that they like to play the blame game. Or at least the interviewer does. Regardless, I got a second interview with someone else, so I don't care.

Now, in contrast, the other company has treated me like gold so far. I had a 3 day turnaround time with my resume/application vs 4 months with the other one (as in when they called me after applying). They also haven't said anything about salary yet, whereas the first one I mentioned low-balled me from the initial phone call. With this other one, I've met the entire marketing team, including my boss, my boss's boss, and the person I would be replacing. They gave me a test piece of work to do, which I did, and they provided feedback on it, which was great. In addition, everyone there, after asking me about my skills, asked me questions about myself. They also gave me their personal experiences working for the company.

You tell me which of the two I'm more interested in.
