My favorite way to eat rice and beans. Easy, cheap, and tasty—I make this all the time but have yet to get sick of it. (Recipe in comments)

Easy Rice & Beans Recipe

1/2 dry white rice 1 can beans (I used pinto) 1/2 medium onion 1/4 cup green onions, chopped Spices (see recipe below)

Optional garnish: light sour cream, shredded reduced fat cheddar cheese, more green onions

Makes about 2 servings

  1. Cook the rice. I cooked rice in the microwave for the first time and it turned out surprisingly well. Took about 20 minutes.
  2. While the rice is cooking, put a dab of butter in a small saucepan on medium heat. Add onions and stir for about a minute.
  3. Add entire (undrained) can of beans, some green onions, and (depending on how dry your pot is) some stock or water.
  4. Add in spices. I used cumin, lemon pepper, onion powder, garlic powder, dill weed, salt, and pepper. Adjust/omit to your own tastes, but I find the cumin to be a necessity. Sometimes I add some chili powder for heat.
  5. Keep pot on low heat and stir occasionally until the rice is done (or about 15 minutes).

And that's it! Pour over the rice and garnish with cheese, sour cream, and a few more green onions. Grab a fork and dig in.
