I rent a 7 bedroom house in Texas, my landlord has cameras in all of the common areas. Is he allowed to use those cameras to constantly question me about things (i.e. did you bring a drink in your room, did you smoke, ect.) What is the line between camera devices for security or tenant harrassment?

You agreed to live in a home where every common area is monitored by security cameras? Are you renting the entire home or just a room in it? This is a seriously sketchy agreement you seem to have entered into and I think a bit more info is needed. The wording you’ve used here is very vague and odd.

When you mention him recording conversations. Is he recording you having a conversation with other people? Or is he recording conversations between him and you? He is within his rights legally to record any conversation that he is a part of. He cannot record conversations that you’re having in the home with other people as you have an expectation of privacy in your home.
