Taco Seasoning

I'm sure that the format here will be all wrong, but this is very easy to do.

Ingredients: -1lb ground meat of your choice (we do deer burger mostly) -1 sweet onion -1 big carrot -5T coconut oil -1 Can of coconut milk -1T Massaman curry paste -1tsp or more curry powder (we like the red) -honey to taste -add any other spices you like: pepper, cinnamon, thyme, mint, etc.

Instructions: -1st - Half your onion and slice thinly. Cut those slices in half. Place in a skillet with a couple tablespoons of coconut oil. -2nd - Cook over medium heat until onions are soft for about 10 minutes or longer if needed, but stir them often so they don't burn. it takes a bit long if they weren't cut thin enough. -3rd - Scrub (or peel) and slice your carrots. Toss them in the pan with the onions. -4th - Add some more coconut oil if things look dry. -5th - Add your curry (paste or powder). I prefer the paste, but have tried it in both forms. Stir and mix until the paste melts and coats the vegetables. This may take a few minutes. -6th - Increase the a bit and add your ground meat. -7th - Cook until meat is browned, stirring and mixing until it's done. -8th - Drain off excess grease, if needed. (some meats are really fatty, but deer meat isn't) -9th - Stir in about half the can of coconut milk and add a little more until is to the consistency that you like. half is normally good for ground beef, but I use about 3/4 of it when i use chicken or deer. -10th - Add honey and your other spices to taste. This will be different every time you make it. Let it all simmer for a few minutes to get all those flavors cooked in. -11th - Cook your tacos, if you like them that way. My daughter doesn't so I always keep a few to the side for her. Enjoy! Also, the meat mixture is really good for a lot of things. You can use it to make stuffed bell peppers by adding some cooked rice to the inside bottom of the peppers and fill the rest with the meat mix and top with thick sliced tomatoes and shredded cheese. Just bake in a 350 degree oven until the pepper is to how you like it. The top gets a little crispy without the cheese. It's also great as a base for shepherd's pie. I hope you enjoy it.
