Not really sure man. If you lock Ezekiel in No Gi then you should be able to finish it without any difficulties. What exactly are you struggling with?

The way I do Ezekiel in No Gi is the same way you’d do it in Gi pretty much. One arm behind the neck and while hiding the other hand by trying to bs the opponent into thinking I’m looking for something else, I go ahead instead of trying to grab my sleeve on the other arm, i instead grab the forearm or the wrist of the other arm and proceed to put pressure on the trachea with that arm either with the side of my hand or what I prefer to do, with knuckles. If my opponent starts to defend the Ezekiel before I can get my hand on their trachea, I try to put their head up by digging my chin into their head or sometimes I try to squeeze in my fingers and then form a wrist.

Never had anyone try to defend it with their own Ezekiel really. The key here IMO is to hide the Ezekiel by being head to head with your opponent and pretend to look for something else while preparing the other hand for the choke.
