not accommodate for their beliefs and lifestyle is a very rude thing to do
Then what is it like? Would you suggest that a person put out a Koran on the coffee table when they invite over a Muslim, a Bible when they invite over a Catholic, and On the Origin of Species when they invite over an atheist?
Don't be ridiculous.
And being vegan is literally a dietary preference. Exactly like preferring pie over cake, for example.
But when I'm providing the food, I select it based on my own preferences.
Exactly like if I was inviting people over to watch a movie - I'm picking the movie, come watch it if you want. If you don't like the genre, or you don't watch rated R movies because of your "lifestyle and beliefs" then go watch your own movie.
You get to make your own choices in life (be that deciding to be a vegan or any other decision), but you don't get to impose that decision on me, or affect my decision at all.
I will accommodate a peanut allergy or something, though, because that's not a decision you made.
A decision like being vegan? You made your bed - lie in it.
