we haven't driven across the country, which is something I really want to do. We have flown across the country to california a few times though. We haven't been ice skating mainly because I suspect my wife would break her tailbone, but perhaps one day. she can wear some butt pads. We have never played paintball together. Other than that we've completed your list.

I will add the following: Get outside your comfort zone together.

Seek an experience neither of you have had, and have it for your first time, together.

Go on a hike to a beautiful vista together, and have a picnic there.
