Fucking awesome Thai Panang Curry....

Ingredients

Maesri Panang Curry Paste.

1-1.5 kg beef chuck

1-2 cans coconut milk or coconut cream

You can get Maesri Panang at any asian supermarket. It's pretty spicy so maybe use half a can the first time and see how you go. More paste = more flavour of course if you can handle the spice.

Chop the beef. You want big chunks, no dimension less than about 4cm. Somewhere in the 4cm-6cm range is good.

If you have a slow cooker, you can just dump the lot in, give it a good stir, and let it simmer for a few hours until the beef is tender and off you go.

If you're using a pot, put it on medium-high heat stirring occasionally until it starts to bubble, then reduce heat to a gentle simmer and put a lid on it. From there on you basically leave it alone, other than a stir every now and again. You want to stir a few times in the first hour, but you can relax a bit on the stirring after that. You're just trying to make the beef cook evenly so just try to move the beef at the bottom to the top every now and again. Cook time varies, but it's probably going to take 3-4 hours as a rough guide, maybe even 5-6. It's ready when the beef falls apart with just a fork.

Serve with rice.

You can improve it a little by browning the beef first, but it's a bit messier and definitely not essential. The whole thing tastes even better the next day too, so big batches are the way to go.
