No, nothing is ever "proven" in science, as I've stated many times in this thread. Even well-established theories like gravity are never proven, just failed to be disproven.

Disagree with this. I really don't think a theory can be "shown to be true". It's just regarded as probably correct as long as everything we observe and the predictions made based on it matches up with it. Theories are not set in stone, by definition.

I think calling a theory a "best guess" is very misleading to laypersons.

Actually not true at all. Evolution can make predictions that can be tested with DNA.

Disagree here, and maybe it's because I didn't state my position clearly. Yes, DNA has been shown to change from generation to generation, for example in bacteria and notably the flu virus (which obviously is why we need a new vaccine every year). Macro evolution, however, does answer many questions and does fit the data we have, but it is difficult to observe since macro evolution takes millions or billions of years as many have already said here (e.g. no one has directly observed and documented one species becoming a completely different one).

Between classical physics and relativity, we have gravity nailed down pretty well.

Not sure that this is true, but I really don't know enough about the specifics to argue with any authority, there definitely are alternatives to general relativity.
