French Onion Soup and Cloud 'Bread' Sticks (75~ Cal)

Hand for scale.

Warning: These aren't really bread sticks, they're made out of egg whites. So don't expect them to taste like bread.

Serves 2 (Or 1, if you're me and hungry)

French Onion Soup: (99) * 200g Onions (84) * 2 cups beef stock (14) * Spices (1-ish)

Caramelise the onions in a pot. Add 1/4 cup of water, and spices. Bring to boil and simmer for a bit. Add beef stock. Simmer. Serve.

Cloud 'Bread' sticks: (51) Makes 10-12 sticks. * 4g Egg white powder, or 1 Egg white (15) * A little less than 1/4 tsp Xanthan Gum (2) * 10g Shredded Mozzarella (32) * 1/8 tsp Cream of Tartar (1) * Salt, Pepper, Spices - I used Italian Seasoning (1-ish)

Preheat oven to 140C.

Mix xantham gum and egg white powder together, add 2 1/2 tbsp of water. Whisk (using a mixer, or elbow grease, if you like) until foamy, add cream of tartar, whisk until stuff peaks and kinda glossy. Add spices and cheese. Fold in, don't worry about being rough, the Xanthan Gum stops it from collapsing.

Pipe it out on a baking tray (with parchment paper!) or just spoon it on. Bake for 35mins, remove, flip it over and bake for another 15. Leave it inside while you cook the French Onion Soup.
