How to preheat enameled cast iron pan in the oven?

The matter that is at temperature and in contact with the object will have varrying ability to transfer heat. Let's say you're outside in freezing temperatures. Just standing outside isn't that bad, but get into the water, you're freezing a lot faster. Same thing with just sticking your hand in the hot oven verses touching the grate. I bet you can tell me which one burns.

Thermal shock to the enamel occurs on direct heat (a stovetop) because of both the increased temperature of the burner relative to an oven and the thermal transfer capability of metal to metal or whatever the burner is made from is higher.

So- ya it matters whether it's in the oven or on the stove.
