I think it's symptomatic of a larger trend to prioritize animal welfare over human welfare.

A lot of plant-based food products have human costs to them. For instance, many fruits and vegetables must be picked by hand, and the majority of those agricultural workers are undocumented PoC immigrants. Additionally, many imported "super foods" have inadvertently turned subsistence crops into cash crops in such a way that farmers, in a form of deadly irony, can no longer afford to adequately feed their families.

When it comes to evangalization of vegan trends, it also overlooks the fact that agriculture, while it isn't land-intensive for calories, is incredibly water-intensive. Animals are more water-efficient; there are many regions of the globe (and these regions are increasing in size due to climate change) where large-scale plant farming is nearly impossible but animal husbandry is practical.
