Day 9 ex-animal-based-diet feeling bad, lightheaded, short of breath easily, and dark circles under eyes. Feeling like I need iron, b12, fat, and meat, fish, and whole milk

Well firstly I am not eating enough, that's for sure because I'm loosing facial and body fat and have had trouble gaining weight for years unless I eat processed. I've mostly been like that for years I guess, but lots of life and circumstantial issues.
Andddd I can't afford to buy 20 different foods, or 10, right away.. I have to eat today and tomorrow and it can't be too cheap and unhealthy, so I've gone with what I have.

I need a lot of calories and I'm already low body fat, but active and strong. I'm not over eating by any means. I know I could add olive oil to everything, but I literally have a 10 year history of eating 200g fat per day, not every day, but very often.
It's normal for me to push the olive oil into 3-6 tablespoons with a giant bowl of curry(germinated/soaked red/green lentils).

Maybe I would substitute for drinking cans of coconut milk, I believe they are only 70g fat... But after reading comments here it seems that fat really gets into the blood and maybe I shouldn't have more than 75g/day.

Mung beans and the bread was because I ate 2 loafs one day, and 2 loafs in 48 hours last week.

I need to eat... That's the reason for it all. It's actually not that much calories, fat, protein, or carbs.

The 2lbs meat was because of meat propaganda, it is only 160g protein 200g fat.

Not sure why I went so wild with the milk, but that high fat diet had me extremely hungry. I also have a brain injury and I don't want to suffer, it seems that I'm barely able to really cross pass 300g carbs daily.

All I'm trying to do is survive and thrive, but I definitely do not eat enough 90% of the time, only sometimes do I gain fat, but I end up burning it off again like right now.

A meal shouldn't have to be 10 foods, I also can't afford to eat 25 different foods in a week. The bread is because it's cooked and sprouted, but why can't I survive off of a few staples(barley, rye, sprouted bread, beans) and mixing in veggies/mushrooms/fruits?
I'm also not willing to eat anything that isn't "activated"(sprouted, germinated, soaked, overnight oats, etc)

Honestly text isn't for these types of conversations...
