So many managers and people in corporate have this sense of grandeur about restaurants that irks me

Flavors are combinations of a bunch of compounds, the overlap of one doesn’t mean one thing smells like the other. It takes a lot more overlap, which is why vanilla ice cream isn’t substituted with wood just because wood has vanillin. There are a ton of compounds many different living things have in common which we don’t say one smells or tastes like the other because of. Cannabis and surstromming both ammonia, but no one says they smell the same.

I’m not arguing wine doesn’t have compounds in common with other things, just that its variety of terpenes is not that high and doesn’t come close to the variety that it can taste like anything other than fermented grapes.
