We quickly progressed the relationship with me basically living with her for the past 2 months. However she said that she wasn't ready for a relationship when we got together, thinking it would be a short term thing.

She needed to you help pay the bills which is why she moved quickly. She literally tells you that she doesn't want a long term relationship and though it was going to be a "short term thing."

It's not about starting over or her starting off on the wrong foot. She's simply stringing you along because right now you're her only option. When she has (in her eyes) a better option, she's going to break up with you again.
