Why not just be vegan?

If it wasn't for my stint in veganism, I wouldn't understand why it's not for me. Vegetarianism is challenging enough, and trying to make every meal vegan, 100% free of eggs/dairy/honey, requires a level of militancy that's exhausting, alienating, and expensive. Most of my substantial meals were carb-heavy and lacked lean protein. Even many of the (few) vegetarian products that were available usually contained egg or dairy. Making lean proteins like seitan at home was a long-drawn out process that I rarely had time for working 50-60 hour weeks. I stuck with it for about 2 years. I was getting IBS symptoms and blood-sugar crashes daily, even though I didn't eat junk-food or sweets. I was accused of being a junk-food vegan as my skin was breaking out and I looked so tired and pale. I was also called skinny-fat by a physiotherapist because despite being tall and slender, I just wasn't maintaining muscle and was kind of flabby. I do not have an aversion to vegan food, I eat vegan food and alternatives every day, I am just never going to be that hectic about it again.
