As a U.S. American I can say the “authentic” version of an international food is almost never better than the Americanized version.

What the USA lacks is really good, high quality, fancy Indian dining - the kind of restaurants in India with tablecloths and 5 servers per table (usually North Indian food). My theory is most Indian people won’t spend 30 dollars for a plate of chickpeas in favor of cheaper places, so the fancy Indian restaurants end up veering toward lowest common denominator bland food, which further turns off people who like authentic Indian food. Not to hate on those restaurants - the food can be good - just not authentic.

At least in NYC any Indian place that gets a Michelin star eventually loses it because they aren’t consistent. Meanwhile, you can get good cheap authentic Indian food in Murray Hill and NJ (or Queens if you want other South Asian food).
