On mobile so please forgive errors. This is one of my favs over rice or as enchilada filling. You can keep it simple or jazz it up with onions, cheese, peppers, and more.

Cilantro lime slow cooker chicken * 16 ounce jar salsa * 1.5 tablespoons (or 1 package) dry taco seasoning mix * 1 lime, juiced * 3 tablespoons chopped fresh cilantro * 2-3 pounds skinless, boneless chicken breasts

Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours (or cook 6 to 8 hours on Low). Remove and shred chicken with 2 forks. Mix shredded chicken back in liquid and serve.

Homemade taco seasoning * 1 tbs chili powder * 1/2 tsp garlic powder * ¼ tsp onion powder * ¼ tsp red pepper flakes * ½ tsp oregano * ½ tsp paprika * 1.5 tsp ground cumin * 1 tsp salt * 1 tsp black pepper

Mix together and store in airtight container. This makes 2 "packages" worth of seasoning, like from the store, so I often just make a half batch and use it all.
