Daily Simple Questions Thread

I'm a beginner to weight training and I feel like I've been reading papers, forums, and watching videos for days and gotten nowhere. I want very simply to increase muscle and not increase my fat percentage. I have read so much conflicting information on if this is possible just eating at a deficit or if I need to just bulk on protein. It makes me just want to quit, because I feel like I'm going to start trying to gain muscle and end up just gaining fat because I don't know what I'm doing. I'm reluctant to rigorously track as well, because in the past this has been extremely demotivating. I've been really enjoying weight training, but it seems like if I don't eat correctly its pointless. Figuring out what I'm supposed to be eating is just sending me in circles. Deficit or no deficit? Surplus with high protein or deficit with high protein? Protein powder? If so, which one isn't a complete rip off or full of carbs? How do I do all of this without it ruining my love for healthy eating and exercise?
