What do you like/not like about the job searching process in the restaurant industry?

Lol BoH gets away with some shit! FoH does too sometimes, but they’re more easily replaced.

In my city, there’s always a shortage of good kitchen people. And they all know each other and talk. If one restaurant gets a reputation of being shitty to work at, well, they’re gonna fucking fail cause none of the good cooks will go near it. Or the restaurant will have to pay out the ass for the privilege.

I like asking the KM why he doesn’t just fire some of these guys who are constantly 10 minutes late or show up to work a little drunk or whatever. He gets so angry like, “DO YOU KNOW HOW HARD IT IS TO FIND A GOOD SAUTÉ GUY?!” I always laugh.
