[ALL SPOILERS] [EVERYTHING] Did I lose something, or is the series too rushed?

Ah, some of the things you complain about - or will after, in later seasons - are also skipped in the books. It's because they're limited to POV's that can't be everywhere, and their understanding of events is actually more colored by bias that in the show, that's not similarly constrained: some of the most entertaining secondary book characters have been given more opportunity to shine. One of the best examples is that heartfelt conversation between Robert and Cersei on the topic of their marriage in S01. That never happens in the books, as far as we know, because neither of them are POV's in AGOT. Ditto for all the verbal matches between Littlefinger and Varys and such.

On the other hand, GRRM started writing ASOIAF after being annoyed - for years - about the constraints of episodic TV. He let his nerd loose: every castle is more fantastic, direwolf present, battles big. While GOT has a big budget, it's still big in comparison to other TV. They don't have a movie budget - I'm actually astounded by how well they juggle simultaneous filming in 3 separate locations, some of them being UNESCO World Heritage sites.

They hit their limit on good-adaptation in S05: the books AFFC and ADWD hit the limit of book-binding technology... so you can imagine how much had to be cut/merged to make it TV. Problem with those books is: they have 2 seasons worth of material, but only one season worth of plot per character. GRRM could split it geographically (to the ire of many fans who were pissed that the most important/interesting POV's were gone from AFFC altogether), but two seasons worth of one timeline - with one missing Jon, Dany, Tyrion - would have been a ratings suicide. And splitting those books timeline-wise wouldn't have worked either, because all the climaxes for the arcs would be in the last 5 episodes of a 20 episode run. So.... they kept what they could, and ran into "choppy adaptation" problems.
