I didn't realize you were trying to stage for fun. I misread your post and thought you were trying to move here. Honestly, I'd just find a restaurant you're interested in and email them and see what they have to say. Most chefs will take free labor, obviously. I've had a few stages come through some of the kitchens I've worked in just to see what's up, but it's not as common as other cities. The culinary community here is pretty small and we all know each other. If I wanted to see what other kitchens were up to, I'd just listen to their drunk asses at the bar. There's not as much of a culture of staging for education/exoerience here. I do hope you find what you're looking for. I've staged in other cities while traveling, and it's a great way to travel.
