I'm not claiming there are no responsible breeders, I know some.

The breed specific rescues would possibly still have what you are looking for. Because that rescue has the breed of dog that was bred to do all of those things you listed, they very well could have a dog that could do all of these things perfectly fine but may have been given up for whatever reason (I knew a purebred working Belgian Malinois that had to be re-homed because the owner died suddenly). Perhaps someone bought the breed for looks and didn't anticipate how high maintenance it would be if they kept it cooped up in a house or yard all day instead of putting it to work. Perhaps they moved somewhere that couldn't accept pets and they didn't want to go back to the breeder (or lost their info) who knows. Though the hunters I know are pretty bonded to their pups (my ex hunts with GSPs).

I'm just saying that just because a dog is pure bred and from a great breeder doesn't mean it never ends up in a shelter. Sometimes they're returned to the breeder and the breeder is in contact with these rescues too. Even a well trained working dog might find itself in an unfortunate situation (like the malinois).

I'm just saying there is a possibility that those breed specific ones might have a dog that'll do it and an eager dog can learn anything even if it's a bit older. I'm not saying that I don't understand someone going to a breeder if they need a very specific working dogs.

I'm just saying there are probably hunting dog specific rescues with dogs that can do the tasks you listed and are run by people just as passionate about hunting and hunting dogs as you, which is why they are in love with the breed and dedicated to trying to find homes for them that will do the things they were bred to do.
